Cold brew vs "iced tea" (the bit people get wrong)
In Australia, "iced tea" often means hot-brewed tea cooled and poured over ice, sometimes sweetened. That is fine for supermarket bags. It is a rough way to treat first-flush Darjeeling. Heat pulls tannins fast. Chill does not erase them. The cup goes thin and astringent once it is cold.
Cold brew never sees hot water. Leaf sits in cold water in the fridge for hours. Extraction is slower. The cup comes out sweeter and less harsh. You can drink it without sugar. That is the point of using loose first-flush for this, not a dusty bag blend.

If you already drink black tea and want a jug in the fridge this week, start with 100 g Darjeeling at $7.50. That is the leaf this method is written for.
The fridge method I use (500 ml and 1 litre)
Gear: a clean glass jar or bottle with a lid, a fine mesh strainer, a fridge shelf that is not next to raw onions. You do not need a branded cold-brew carafe. A pasta-sauce jar washed well works.
500 ml jug (one tall glass + a top-up)
- Weigh or scoop about 2 level teaspoons of leaf. That is roughly 3 to 4 g. If your tsp is heaped, start lighter. First flush is fragrant; more leaf does not always mean better.
- Drop the leaf into the jar.
- Pour 500 ml cold water over it. Melbourne tap is what I use at the warehouse kettle. If your tap tastes heavily chlorinated cold, use a jug filter. Cold brew sits for hours, so off-flavours show up more than in a three-minute hot cup.
- Lid on. Shake once so the leaf is wet.
- Fridge 8 to 12 hours. Overnight while you sleep is the easy version. Taste at 8 hours. If it wants more body, leave it to 12. Do not leave it for days with the leaf still in.
- Strain. Press the leaf gently. Discard the wet leaf (compost if you can).
- Drink cold, or pour over ice. Lemon slice optional. Sugar optional. I usually skip both.

Double it: about 4 level teaspoons (~7 to 8 g) leaf + 1 litre cold water. Same 8 to 12 hours. Same strain. This matches the spirit of Tea Harvest's 4 tsp / 1 L / 8 hours method, scaled to the leaf I pack.

Your teaspoon size varies. A cheap kitchen scale is worth it if you care. I am giving kitchen measures because that is how people actually brew on a Tuesday night.
Why hot-brew-then-ice wrecks first flush
People boil Darjeeling hard, pour it over a glass of ice, and decide Darjeeling is "weak and bitter." Two problems stacked.
- Rolling boil. The PDP says 85 to 90°C, not a furious boil. Boiling water pulls harsh notes from delicate first flush. I wrote that for hot cups already.
- Shock chill. You extracted tannins with heat, then served the same liquor cold. Cold does not hide astringency the way a hot cup with milk can. The drink tastes thin and sharp.
Cold brew skips both. No boil. No ice shock on a hot concentrate. If you are in a hurry and only have ten minutes, make a proper hot cup at 85 to 90°C for 3 minutes, cool it in the fridge, then ice it. Still better than a hard boil. Cold brew overnight is still the smoother spring drink.
Caffeine: still counts, still food
Hot cup on our pages: about 40 to 50 mg. Cold brew generally extracts less caffeine than a hot steep of the same leaf. I am not going to invent a milligram number for my fridge jar. Treat a tall cold glass as real caffeine, not herbal water. FSANZ guidance for healthy adults sits around 400 mg per day. Link the numbers, do not invent them: caffeine vs coffee, safe daily amount, caffeine cutoff for sleep.
If caffeine is a problem for you, skip the tea. I will not sell you a "detox spring cleanse." This is a drink.
How long it keeps
Once strained and covered in the fridge, drink it within 3 to 4 days. If it smells off, looks cloudy in a weird way, or develops a film, tip it out. Brew smaller, more often. A 500 ml jar every two nights beats a sad 2-litre batch on Friday.
Leave leaf sitting in the jar for a weekend and you get a muddy cup. Strain on schedule.
