Giving Darjeeling: what to tell the person you're giving it to
If they're used to tea bags, a few pointers on your card will help them enjoy it:
- Don't use boiling water. About 85 to 90°C (let the kettle sit for a minute after it boils) keeps Darjeeling from tasting harsh.
- Weigh once. About 2 to 2.5g per 200ml cup. After that, a heaped teaspoon is fine.
- Try it black first. Then add milk if they like.
- Store it well. Keep the pouch sealed, cool and dark, away from spices and the stove.
